Dinner with the Gamez Family



Tonight we had the Gamez Family over for dinner, they were great fun and here is what we ate:

Pork Roast with Brent's Special Rub
Shannon's Jell-o Salad
Pioneer Woman's Mashed Potatoes
Sauteed Corn
Melanie's Salad
Frozen Rhode's Roll (You have got to try their quick method, it is gooooood!)
Dessert: Skor Cake

Brent's Special Rub: Here are the ingredients:



In a small bowl mix:
1 clove garlic
2 t. kosher salt
1 t. pepper
3/4 t. thyme leaves
3/4 t. dried rosemary crushed
2 T. olive oil
1 1/4 T. balsamic vinegar




Now rub that stuff all over the nice 4 lb. pork roast. Place it on a greased roasting pan with rack. Bake 325 degrees for 20 minutes per pound or until the internal temperature of your roast is 175 degrees.




It should look something like this, nice and brown, yummy looking. Cover it up for 15 min., to let it rest. Then slice it up and eat away!

P.S. The juices make a yummy gravy, if you have the time and energy. Tonight I didn't feel like it, such is life.


Next, let's go straight to dessert!!!!

SKOR CAKE!!!! Yummy!




These are the ingredients:

Chocolate Cake mix, bake according to directions on box
6 - 8 Skor Bars I like lots and lots!
1 can sweetened condensed milk
1/4 c. caramel syrup
1 small container Cool Whip



Bake your cake and let it cool.

While it is cooling put your Skor Bars into a zip-loc baggie. Let one of your kids beat it to a pulp with the back of a wooden spoon or a meat mallet, or you can do it if you have some unaswered aggression you need to rid yourself of. When finished, it should look something like this.





The hard part is not eating the yummy little bits of candy but they should be about this size.

Next with the end of a wooden spoon, poke holes all around your cooled chocolate cake. Like this:



Now pour almost all of the Skor bits onto the cake. I use my fingers to put the little bits down into the holes and spread it evenly all into and over the top of the cake. It sounds likes this is time consuming but it actually goes pretty fast, especially if you are still eating the little candies as you go, not good but it happens. Save about 1/4 c. of the skor candy for the top of your cake, DO NOT EAT IT!

Next, comes the drizzling.
First drizzle the sweetened condensed milk all over the cake:




Then drizzle the carmel syrup but I didn't have any so I used chocolate syrup (you can never have enough chocolate on chocolate can you):




It's time for the Cool Whip:
I put nice big blobs all over the top and then connect the blobs together, sort of like connecting the dots, it is fun.



Once the Cool Whip is all over the top, sprinkle the last bits of Skor Bar on top and shazam, here is your Skor Cake!



Beautiful! You can eat it now but it is best, if you are brave enough . . . to . . .

Cover it with Saran Wrap and put it in the fridge for a few hours or overnight. This lets all of the yummy goeyness blend together. Yummy!
